tomatoes & green chillis with other stuff
Ingredients 1 cup pasta
1 can tomatoes & green chillis
1 tbsp lemon juice
1 tbsp lime juice
1 tbsp black pepper
1 tbsp salt (split)
1 tbsp garlic powder
2 tbsp chilli powder
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp paprika
1 tsp cumin
1/3 lbs ground beef
2 handfuls of spinach a dash red chilli flakes (optional)
1/4 cup cheese dollop of greek yogurt
Instructions
- cook pasta according to box
- cook ground beef and add spices. cook til its done (duh)
- once both are done cooking, drain pasta. add both the ground beef and pasta into the pot
- add can of tomatoes & green chillis to pot as well as lemon and lime juice
- stir until spinach has wilted
- boil until its a consistency you like. remember the sauce will be less liquidy as it cools by about half
- serve and top with cheese and sour cream
About This Recipe
This recipe is so good in the winter, but can absolutely be a bit spicy. i like to add greek yogurt, but sour cream is probably more traditional.
i have absolutely no idea what to call it. the recipe i adapted it frommcalls it “mexican zucchini beef skillet” which is an attractive name. not sure what makes it mexican other than the cumin.
this recipe used to remind me of a stuffed pepper filling. so i used to make it with pepper and rice. rice is still pretty good in it, but i found the peppers would get soggy.
as always, all seasonings are optional and adjustable. if it’s too liquidy you can always boil off some of the water to help.
