Spinach & Ricotta pasta

Ingredients 1 cup pasta
1/3 cup ricotta
2 tbsp pasta water
1 handful spinach
1/2 tbsp black pepper
1 tsp garlic powder
1 tsp lemon juice
1 tsp onion powder
1 tbsp butter or olive oil
a dash red chilli flakes (optional)

Instructions

  1. cook pasta according to box, reserving pasta water before straining
  2. add ricotta, pasta water, lemon juice and seasonings
  3. stir until spinach has wilted
  4. optionally add protein (salmon, chicken, etc.)

About This Recipe

This is so genuinely one of my favourite recipes. it is SO GOOD. it’s basically just adult mac & cheese. the starch in the pasta water helps the spinach wilt, without it the ricotta won’t turn into a sauce.

as always, all seasonings are optional and adjustable. italian seasoning does good in this and if it’s too liquidy you can always boil off some of the water to help.
