Spinach & Ricotta pasta
Ingredients 1 cup pasta
1/3 cup ricotta
2 tbsp pasta water
1 handful spinach
1/2 tbsp black pepper
1 tsp garlic powder
1 tsp lemon juice
1 tsp onion powder
1 tbsp butter or olive oil
a dash red chilli flakes (optional)
Instructions
- cook pasta according to box, reserving pasta water before straining
- add ricotta, pasta water, lemon juice and seasonings
- stir until spinach has wilted
- optionally add protein (salmon, chicken, etc.)
About This Recipe
This is so genuinely one of my favourite recipes. it is SO GOOD. it’s basically just adult mac & cheese. the starch in the pasta water helps the spinach wilt, without it the ricotta won’t turn into a sauce.
as always, all seasonings are optional and adjustable. italian seasoning does good in this and if it’s too liquidy you can always boil off some of the water to help.
